A delicious, inexpensive rice/bean/sausage meal that's easy to prepare.
Ingredients:
- 1 cup of rice
- 1 lb of hot sausage
- 1 green pepper chopped
- 1/2 onion diced
- 1 can of chili
- 1 can of beans (kidney or black)
- 2 tbsp chili powder
- Hot sauce (optional)
Cooking Instructions:
Start cooking the rice in a large pot with a little excess water. At the same time, cook the sausage in a medium frying pan. Add the green pepper and onion to the sausage halfway through cooking. When the rice is cooked, add the can of chili and the can of beans. When the sausage, peppers, and onions are fully cooked, add them to the rice/bean mixture. Add chili powder and hot sauce to taste. Let simmer 5 minutes and serve.
