More than 400 dairy farms provide the cheese maker with milk. Brewster Dairy markets a variety of the holey cheeses, including regular Swiss, baby Swiss, lacey Swiss, and reduced-fat Swiss, under the Brewster Cheese brand name. Brewster Dairy's products can be found in retail grocery stores and deli shops throughout the US. As part of its business, the family-owned company also makes dairy proteins and whey powders that are used as ingredients by other food manufacturers.
