Benihana Inc. operates Benihana teppanyaki-style Japanese restaurants in the United States. The Company also operates two other Asian restaurant concepts: RA Sushi and Haru. Its core concept, the Benihana restaurant, offers teppanyaki-style (teppan) Japanese cooking, in which fresh steak, chicken and seafood are prepared by a chef on a steel teppan grill at the center of the customers’ table. Its RA Sushi concept offers sushi and a menu of Pacific-Rim dishes in an environment featuring design elements and contemporary music. Its Haru concept offers a menu of traditional Japanese and Japanese fusion dishes in a modern, urban atmosphere, as well as take-out and delivery services. As of June 29, 2009, the Company owned and operated 65 Benihana restaurants, including one restaurant under the name Samurai; franchised 22 additional Benihana restaurants; owned and operated 23 RA Sushi restaurants, and owned and operated nine Haru restaurants.
